The major objective of this study is to report physico-chemical properties of sunflower oil samples collected from different stages of the technological process for sunflower oil refining for food industry. The samples of oil were crude oil, washed oil, bleached oil and deodorized oil. The physico-chemical properties of sunflower oil experimentally determined were density, saponification value (SV), iodine value (IV), and acid value (AV). It was found that the density of sunflower oil remains approximately constant over the different stages of the manufacturing flow of cooking oil, except the crude oil. The acid value significantly decreases from crude oil (2.588) to deodorized oil (0.366). The iodine value and saponification value of the different samples of the sunflower oil corresponding to different stages of oil processing varies slightly. The capacity of different models to accurately correlate and/or predict the density of vegetable oil was tested. The density of sunflower oil can be accurately estimated from its SV and IV or with an empirical equation, when density data are available.

This paper proposes two new relations of dependence of log dynamic viscosity depending on log absolute temperature shear rates between 3.3 and 120s-1. The constants A, B, and C were determined by Origin 6.0 software by fitting linear or polynomial curves obtained from experimental data. The two proposed relationships give correlation coefficients close to one.
The aim of the study was to determine the effect of various forms of sunflower oil in the diet with protein degraded at different rates in the rumen on pancreatic juice secretion and activity. The experiment was conducted on 24 adult Corriedale rams weighing about 40 ± 1.5 kg, catheterized in the pancreatic and bile ducts and fistulated in the duodenum. The animals were fed diets consisting of meadow hay, potato starch, different degradable protein (casein or maize gluten, a source of zein) and different forms of sunflower oil (calcium salts, seeds and oil). It was stated that addition of various forms of fat to the diet did not significantly influence the secretion of pancreatic juice, regardless of the source of protein. However, sunflower seeds and oil used in the diet had a significant effect on bile secretion, protein content, proteolytic activity of trypsin and plasma lipid indices. No significant differences were observed in the lipolytic activity of the pancreatic juice, although lipase activity was higher when zein was used as the main protein source. It was concluded that dietary addition of certain combinations of protected or unprotected sunflower oil and different degradable protein may improve pancreatic activity and probably affect plasma lipid indices in sheep.
Theme Article deals with the use of infrared spectrometry (ATR method) to analyze oxidation, because oxidation plays a role in the self-ignition of oils. As samples were used - sunflower oil, linseed oil. Aim experiment to verify that the infrared spectrometry modified by the ATR method is suitable for the evaluation of the oxidation of liquid substances. Verification of the suitability of the method was performed by comparing the data obtained during the measurement of this experiment with the data verified in other publications. Subsequently, the influence of temperature and time on the oxidation assumed was investigated.
Presented paper is focused on comparison of certain physical properties of selected vegetable oils. Physical properties, such as density, dynamic, kinematic viscosity and fluidity, were experimentally determined. All experiments were conducted on two samples of vegetable oils: sunflower and extra virgin olive oils with approximate temperature range of 5–32 °C. Density of oils was determined by oscillation method utilizing digital densimeter Anton Paar DMA 4500M at different temperatures. Dynamic viscosity was measured by means of rotational viscometer Anton Paar DV-3P. The rest of rheological parameters were determined on the basis of their definitions. Obtained results are depicted as graphical dependencies of rheological parameters and density on temperature. These dependencies of vegetable oils on dynamic and kinematic viscosity showed decreasing exponential shape, which is in compliance with Arrhenius equation; temperature dependencies on fluidity showed an increasing exponential shape for both samples. Density dependencies of samples on temperature were characteristic with decreasing linear function within measured temperature range. Similar results were achieved by other researchers. On the basis of measured values, it is evident that dynamic viscosity of extra virgin olive oil shows higher values than sunflower oil viscosity, which is a result of different composition of oils.
Based on many regulations the biofuels are widely used in combustion engines. The operational parameters, such as performance parameters or emission production, are often monitored. The essence of changes to these operational parameters is related to the effect of biofuels on the course of cylinder pressure inside the combustion chamber. The contribution deals with the effect of biobutanol-sunflower oil-diesel fuel blends on the performance parameters, the behaviour of the cylinder pressure of the compression ignition engine during combustion, and exhaust gas temperature. Biobutanol-sunflower oil-diesel fuel blends in ratios of 10–20–70% and 20–20–60% were used as test fuels, with diesel fuel used as a reference. Turbocharged four-cylinder inline CI engine Zetor 1204 installed in the tractor Zetor Forterra 8642 was used for measurement. Based on the results, it can be stated that with higher amount of butanol in the fuel mixture, the maximum value of cylinder pressure decreases, especially at a high engine load.
