Considering the nutritional values, breadstuff plays a big part in covering human nourishment needs and constitutes a base of all day diet. Moreover, bread is an excellent source of numerous vitamins and minerals the abundance of which depends on the degree of grinding. Thus, it seems to be very important to know the composition and level of bio-elements. That is why the main target of this study was to evaluate the concentration of selected trace elements: chromium (Cr), nickel (Ni), iron (Fe) and manganese (Mn) in wheat grain, wheat bran, different wheat and rye flour types and variety of breadstuff also with addition of grains and seeds from different bakeries and mills. Another task was to analyze if the technological process has an influence on secondary despoil of bread goods with heavy metal elements. The analyzed trace elements were measured with a precise and accurate atomic absorption spectrophotometric method (AAS) and the results were expressed in mg/kg of selected sample. Obtained results show that bread and grain products are a good source of trace elements like chromium, nickel, iron and manganese. However, the higher levels of chromium and nickel in bread goods could rather be an effect of impurity caused by a technological process in mill and bakeries.

Objective: The aim of the current study was to investigate possible associations between catalase C262T (CAT C262T), glutathione peroxidase 1 Pro198Leu (GPX1 Pro198Leu), manganese superoxide dismutase Ala16Val (MnSOD Ala16Val) gene polymorphisms and non-Hodgkin Lymphoma risk (NHL) in a Romanian population and the five-year overall survival rate of the NHL patients.
Methods: We included in this case-control study 406 individuals, divided into two groups: the control group (n=315) and the patients group (n=91). The DNA was extracted from peripheral blood and amplified using specific techniques.
Results: The variant homozygous genotype of GPX1 Pro198Leu represents a risk factor for NHL development and no associations regarding the risk for NHL were found for MnSOD Ala16Val and CAT C262T gene polymorphisms. Two of the studied polymorphisms were associated with the overall survival rate thus: negative association regarding MnSOD Ala16Val, associated with higher overall survival rate and a positive one regarding CAT C262T, associated with lower overall survival rate.
Conclusions: According to our results, the mentioned polymorphisms may be considered as susceptible markers of the five-year overall survival rate for NHL patients. Future studies with a larger number of patients are needed to confirm our results.

Introduction. Foodstuffs of special nutritional use and dietary supplements, especially in the case of sportsmen, have been known and widely used in human nutrition, nourishment, and convalescence for many years. Aim. The aim of the study was to assess the nutritional value of two groups of special dietary formulations and, in particular, to compare the nutrient and energy content declared by producers with that revealed by the present analyses. Material and methods. The nutritional value of two groups of formulations was assessed. The first group comprised formulations for undernourished subjects or those with contraindications to use diets with normal content of proteins and/or fats. The second group of formulations included products intended for strengthening the organism and targeted mainly at sportsmen. Samples of purchased products were analyzed for the content of basic components: dry matter, total protein, crude fat, crude ash, and structural carbohydrates. The content of carbohydrates and energy value was calculated mathematically. Additionally, the content of selected minerals (calcium, potassium, sodium, magnesium, iron, zinc, copper, manganese) was determined. Results. The content of carbohydrates, proteins, and especially fat in the chemical composition of the analyzed products declared by the producers differed from the levels determined in this study. In the mineral composition, differences were noted in the content of macroelements, while the content of micronutrients did not differ from the declared values. Despite the differences in the composition, the declared and calculated calorific values in all formulations were similar. Conclusions. There were differences between the declared and determined contents of nutrients in the analyzed formulations. The labels of the special-purpose industrial formulations purchased in pharmacies provided more information about their composition and nutritional value, whereas the information presented on the labels of the athlete supplements were less informative. Consumption of the supplements, in particular those dedicated for sportsmen, should be supervised by a doctor or dietitian.
