The properties of nanoparticles have been used in a wide range of potential applications in food industry, medicine, microbial biotechnology, cosmetics, environmental production. Research results of evaluation of the effect of Fe3O4 and TiO2 nanoparticles applicated in large concentration limits on some parameters of pigmented yeast strain Rhodotorula gracilis CNMN-Y-30 are presented in this paper. It was established that nanoparticles selected for study caused toxic effects on β-caroten accumulation and activity of antioxidant enzyme catalase depending on concentration and nanostructure. The strong correlation between concentration of nanoparticles and evaluated components has been revealed at studied yeast strain. Coefficients of correlation varied in limits R2 = 0.623... 0.951. For the first time, the determination of β-carotene accumulation and catalase activity rate as functional tests for estimation of toxicity of nanoparticles for pigmented yeast strain Rhodotorula gracilis was effectuated. Thus, it was established that adaptive response of yeast strain to the presence of Fe3O4 and TiO2 nanoparticles has been manifested by modification of the processes of β-carotene biosythesis and catalase activity.

Angiotensin I converting enzyme (ACE) inhibitory peptides derived from milk proteins have obvious effect of lowering blood pressure, safe and non-toxic side effects. This study compared four commercial proteases, namely alcalase, flavourzyme, neutral protease and proteinase K for their ACE inhibitory activity in skimmed goat and cow milk and identified the best one with higher ACE inhibitory activity. The degree of hydrolysis (DH) of alcalase and proteinase K were much higher than flavourzyme, neutral protease for both skimmed goat and cow milk. Alcalase was the best enzyme to produce ACE inhibitory peptides from goat milk, with the ACE inhibitory activity 95.31%, while proteinase K was the optimal protease for hydrolyzing cow milk, with 81.28% ACE inhibitory activity. Furthermore, no correlation was obtained between the ACE inhibitory activity and DH for both goat and cow milk.

in this experiment it was used contactless measurement method using a thermographic camera. Surface temperatures were recorded from three different parts of the animal,(the surface of the core body, the eyes and the udde)r. The aim of this study was to determine how much the temperature values that are obtained using the thermographic camera are accurate.. Its accuracy depends on many factors such as particularly good settings of the thermographic camera, a microclimate of environment, an emissivity of measured object, the character and colour of the coat or the degree of muscles. It was also monitor the correlation of the measured surface temperatures with a rectal temperature, which is an indicative of the internal body temperature.

Isolation and industrial exploitation of probiotics from human milk is a goal for worldwide milk biotechnology centres because of their modulation effect on the immune system in infants and adults. In the proposed study we have analysed fermentation patterns of Lactobacilli isolated from human milk, the reliability of API 50 CH carbohydrate fermentation system and a possible link between lactose concentrations and fermentation profiles on carbohydrates. We had succesfully identified three species of Lactobacillus (paracasei ssp paracasei, fermentum, acidophilus) and one unsatisfactory identification of Lactoccocus lactis ssp lactis. These strains had different carbohydrate fermentation patterns but with common characteristics and showed no statistically significant correlations between their carbohydrate metabolic trends and lactose concentrations in the milk samples.

In order to study the quality changes and shelf life of chitosan coated eggs during storage, the quality, gas chamber diameter, yolk coefficient and the quality change of Hough unit during storage were measured at temperature of 5, 20 and 35 ℃. The Pearson correlation between the quality indexes and the egg Hough’s unit value was analyzed, and the yolk coefficient was analyzed dynamically and the shelf life prediction model was based on the basis of the Arrhenius equation. The results showed that the quality of eggs, egg yolk coefficient, and Huff units all decreased with the extension of storage time, and the diameter of the air chambers of eggs showed an increasing trend with the extension of storage time. Moreover, the storage environment at high temperature (20 and 35 ℃) had a significant effect on the quality deterioration than the low temperature (5℃) storage environment; The correlation coefficient between egg yolk coefficient and Hough unit is the highest at all temperatures, which can be used as an important indicator for shelf life prediction; According to the changing rule of egg quality, the yolk coefficient can establish a first order kinetic model. According to the model established by the egg yolk coefficient, the coefficient R2 of the fitting curve of the predicted value and the measured value is 0.9825, and the average relative error P is 9.32% and less than 10%. The kinetic relationship between yolk coefficient and temperature is well described. At the same time, based on the dynamic model, the shelf life prediction model of chitosan-coated eggs based on yolk coefficient was determined by the dynamic model. The average relative error was 7.6%, less than 10%, which indicated that the egg shelf life prediction model based on the change of egg yolk coefficient was feasible.

In the course of the research, we determined selenium and dry matter content of 35 wheat grass and 35 wheat seed samples. The selenium content of the preparation plant probes was measured by spectrofluorimetric determination (λexcitation = 380 nm, λemission = 519 nm) of the resulted piazselenol complex. It was established that between the selenium content of the wheat grass and wheat seed the correlation coefficient was 0.36 at p = 0.05 level, which indicates a medium-close correlation. Similarly, there was a medium-close correlation between the selenium content of the wheat grass calculated on dry-matter basis and total selenium content of the wheat, with a correlation coefficient of 0.40 at p = 0.02 level. Afterwards, beside the selenium content, we measured the selenomethionine content by ion-exchange chromatography and highperformance liquid chromatography, and the organic selenium content was calculated. A very close correlation was established between the total selenium, selenomethionine and calculated organic selenium content of wheat (the correlation coefficients were between 0.92 and 0.99 at p = 0.01 level). The correlation between the selenomethionine content of wheat grass and wheat seed was very weak (r = 0.23).
